    With the Cantonese caramelised technique or also known as Confit in the Canton style, a much finer quality caramelisation is obtained than with the traditional technique, it is named after being native to this region, close to the Hong Kong Bay. syrup based on sugar, which is boiled to caramelise. The syrup is introduced into the interior of the fruit by osmosis, unlike the traditional caramelised in which the sugar is left outside. After the appropriate time, the nuts are extracted and fried with great care and for just enough time to finish the process, resulting in an exceptional caramelised product.
